Good Morning Bb’s!

Happy Thursday!! In case you forgot/are trying to ignore the holly jolly music everywhere you go.. We are only TWO little weeks away from Christmas!!! (My fave holiday ever!) I’ve been super on top of Christmas this year.  Ie: decking the halls, hanging twinkly lights, lighting yummy candles, singing carols, you know- bugging the hell out of my fam/friends.. Nbd..

Tangent- why the f do I feel like I need a bigger house every year around Christmas?! Like can I buy every decoration known to man?? Not without more storage, beezy… (This is an internal struggle).


This year I have been super duper down with online shopping.  No, I did not brave the insane crowds the day after Thanksgiving. I opted instead to shop from my iPhone, glass of wine in hand by the fire.  Sorry not sorry I’ll stay at home. I’m a girl who definitely likes her sweets from time to time…

I don’t like to deny myself or feel like I’m starving (remember this?) So, I whipped up an easy, healthy little ice cream alternative that did just the trick to curve my evening sweet fix.

photo 5Here’s the beauty of this little recipe vs. store bought ice cream:

+No dairy! The less dairy I consume, the less I want it/can even tolerate it when I do have it. Many people are lactose intolerant, if you don’t know if you are/are unsure, try cutting dairy, you’ll see a difference! Besides, drinking milk is not necessary for optimum health, and is potentially harmful (my opinion). I always go for Almond Milk, always.

+It’s very rich, feels decadent but ISN’T.

+A healthy alternative, all of the items used have fantastic health benefits, they aren’t empty additives, or icky ingredients you can’t even spell, much less pronounce!

+Cacao Powder is DELICIOUS!!! Cacao has a variety of great health benefits (in moderation) such as: magnesium, iron, antioxidants, omega fatty acids and fiber! I use this one. Sunfood Superfoods Cacao Powder is Non-GMO, and made from the highest quality cacao beans, cold pressed into a powder to maintain its full nutrient density.


OK, so here we go:

Processed with VSCOcam with f2 presetIngredients: 2 bananas (ripe), 2 Tbsp Cacao Powder, 3 Organic Dates (pitted), 1 Tsp Pumpkin Spice, 4 Tbsp Almond Milk.

This is a no brainer, throw all the ingreds in a blender, freeze, enjoy!

This makes two servings (technically), but mine is just sitting in my freezer for whenever I get the craving. It’s safe to enjoy within the week for optimum nutritional benefits. I just have a couple of scoops whenever the sweet tooth starts screaming and this does more than the trick!

photo 4BTW- ALL of my favorite bloggers have done a variation of this. Some add strawberries instead of cacao, some mix in dark chocolate bits instead of the cacao powder, this is totally customizable. Just think of your fave ice cream flavor and add that ingredient (all natural peanut butter swirled in, almond butter, fresh fruit, etc etc). Just think all natural, all organic and fresh!!

Tip- Sprinkle coconut flakes on the top for a little snowy sweet top! I use these.

    Happy Wednesday, loves!

IMG_1703Today I bring to you, one of my favorite non-indulgent but totally feels indulgent recipes for a food we all can agree we love to eat- PIZZA.

Pizza is one of my all time favorite foods, but I rarely used to eat it until recently because it felt like way too much… I mean, all of that cheese, bread, salty pepperonis, sausage, etc. Yuck!  Like, sorry, I’m not going to eat well all week/bust a$s at the gym and erase all of that work with one meal… #Sorrynotsorry.  However, I HATE to deprive myself, so that’s why it felt completely necessary to try a skinny version. Trust me when I say this, you will love it! Bonus/TOTAL WIN- it won’t kill the waist line (HOLLA!)

Coconut Oil (buy here), 1/2 Tbsp Avocado Oil, Oregano (buy here), Thyme, Pepper, 1 Organic Zucchini Squash, 1/2 Organic Yellow Onion, 2 Organic Garlic Cloves, 1/2 Cup Organic Cherry Tomatoes, Organic Shredded Cheese (to taste), Tomato & Basil Marinara (or your favorite marinara), 1 tortilla or flat bread of your choice.

Step 1: Preheat your oven to 350, place your tortilla (I used a whole wheat tortilla, it’s up to you what you’d like to use as your “crust”) on a flat baking pan.

Tip: spread a tiny amount of Skinny & Co. Coconut Oil on the tortilla to help make it crispy!

IMG_1704Step 2: Throw a small pan on the stove at medium heat, slowly add your Skinny & Co. Coconut Oil to the pan, 1/2 tbsp of Avocado Oil, Oregano, Thyme, Pepper and Garlic.  Slowly add diced zucchini and onion. Saute until onions are caramelized (you might fall over with absolute love from the aroma, FYI).

Step 3: Place the tortilla in the oven for 2-3 minutes to warm, remove and add marinara to the tortilla as your base (just use a little, no need to go overboard.)

Step 4: Stack onions, zucchini, on top of tortilla, tomatoes on top with a light dusting of cheese on the very top. Cook in oven for 5 minutes.

Step 5: Remove, DIE of absolute happiness.

Basically, the key to weight loss and to maintaining your weight is to make good choices.  Eating a full size pizza from any number of restaurants may sound great, but it will set you back significantly if you’re trying to lose weight or even maintain.  It’s all about portion control, using fresh and healthy ingredients, and curbing those cravings in a healthy, sustainable way.  Wash this Skinny Mini Pizza down with my fave green smoothie and you’ll be full & satisfied!

There’s a reason I didn’t title this post as my “Beet It Juice“, although I wanted to, badly.

Beets are kind of like that kid in the back of your 4th grade class, picking his nose and giving zero f’s about it.

Not hot.

Although they seem like an acquired taste, and some cringe at the thought of them, they pack a huge nutritional punch, and can actually taste great!

So today, I bring to you, my faithful and loving friends, my favorite “Beet It Juice.”

Beets are low in cals, low in fat, packed with fiber, folate and Vitamin B.  Folate is great for lowering your risk of cardiovascular disease, is great for your hair, oh and is perf for expecting Mom’s, as it has been proven to decrease the risk of spinal birth defects in babes. Beets are also high in potassium, which helps lower blood pressure! Attn: all you stress balls out there, this one’s for you!

Whether you hate (or love) beets, I promise this smoothie will please your pallet and bring your body a much needed burst of nutritious energy!

Ingredients: 3 Beets, 5-8 carrot sticks, 1 apple, strawberries, ginger, and a handful of spinach.

As you all know by now, I’m all about eating healthy and being very aware of the ingredients in the foods I eat. I still love to indulge a little bit, I still like to have a little fun beyond just fruits and veggies, so I do occasionally venture out into world of packaged foods.

Recently my buds over at Chipz Happen sent me all of their delicious flavors of chips to try and I have to say, healthy tastes good.
