Today I bring to you, one of my favorite non-indulgent but totally feels indulgent recipes for a food we all can agree we love to eat- PIZZA.
Pizza is one of my all time favorite foods, but I rarely used to eat it until recently because it felt like way too much… I mean, all of that cheese, bread, salty pepperonis, sausage, etc. Yuck! Like, sorry, I’m not going to eat well all week/bust a$s at the gym and erase all of that work with one meal… #Sorrynotsorry. However, I HATE to deprive myself, so that’s why it felt completely necessary to try a skinny version. Trust me when I say this, you will love it! Bonus/TOTAL WIN- it won’t kill the waist line (HOLLA!)
(Cold Pressed, 100% Raw)

On to the good stuff!! Skinny Mini Pizza, here we go!
Ingredients: 1 Tbsp Skinny & Co. Coconut Oil (buy here), 1/2 Tbsp Avocado Oil, Oregano (buy here), Thyme, Pepper, 1 Organic Zucchini Squash, 1/2 Organic Yellow Onion, 2 Organic Garlic Cloves, 1/2 Cup Organic Cherry Tomatoes, Organic Shredded Cheese (to taste), Tomato & Basil Marinara (or your favorite marinara), 1 tortilla or flat bread of your choice.
Step 1: Preheat your oven to 350, place your tortilla (I used a whole wheat tortilla, it’s up to you what you’d like to use as your “crust”) on a flat baking pan.
Tip: spread a tiny amount of Skinny & Co. Coconut Oil on the tortilla to help make it crispy!
Step 2: Throw a small pan on the stove at medium heat, slowly add your Skinny & Co. Coconut Oil to the pan, 1/2 tbsp of Avocado Oil, Oregano, Thyme, Pepper and Garlic. Slowly add diced zucchini and onion. Saute until onions are caramelized (you might fall over with absolute love from the aroma, FYI).
Step 3: Place the tortilla in the oven for 2-3 minutes to warm, remove and add marinara to the tortilla as your base (just use a little, no need to go overboard.)
Step 4: Stack onions, zucchini, on top of tortilla, tomatoes on top with a light dusting of cheese on the very top. Cook in oven for 5 minutes.
Step 5: Remove, DIE of absolute happiness.
Basically, the key to weight loss and to maintaining your weight is to make good choices. Eating a full size pizza from any number of restaurants may sound great, but it will set you back significantly if you’re trying to lose weight or even maintain. It’s all about portion control, using fresh and healthy ingredients, and curbing those cravings in a healthy, sustainable way.
